Extra Zucchini

If you are worried about your zucchini going to waste before you can use it, here is a little tip.
Grate your zucchini in your food processor. Place in freezer bags, label and date bags, and store until ready to use. When ready to use defrost at room temperature or in refrigerator. Ring out on clean kitchen towel before adding to favorite bread, cake, or fritter recipe.
