Monday Menu

I haven't been as good about planning a menu since I started back to work. Now is when I could really use it. I thought if I made a post out of my menu for the week - it would inspire me to 1- actually make a menu and 2 - follow through! You also get a look at my schedule because that affects what we will have. (ie - easy meal after a night shift, something that is easily reheated on night shift, etc) Here's what we are going to have for dinner this week:

 
Monday (Family Home Evening) - Chicken, Mac & Cheese, Salad
Tuesday (Errands, Dr. appts, etc)- Coconut Curried Shrimp and Mango Stew
Wednesday (night shift) - Pasta (haven't decided what kind yet)
Thursday - Ultimate Nachos (easy, and perfect to eat while watching American Idol)
Friday (night shift) - Big Salad
Saturday (date night)- Try to recreate Chicken Bryan from Carrabba's
Sunday (church) - Stuffed Shells, bread, salad

What are you having for dinner this week? (I am looking for ideas for next week)

Yum! That shrimp stew looks delicious. I am putting that on my list for next week. And why do I always forget about nachos? So easy!

Sounds like a delicious week!! Here's our menu this week...

Mon: Hamburgers & roasted veggies
Tues: Sausage & rice
Wed: Brinner {Breakfast for dinner}
Thurs: Leftovers
Fri: BBQ chicken pizza
Sat: Fried Chicken & mashed potatoes
Sun: Mexican food

Simple, easy and nutritious {most of it anyways} :)

Chicken Bryan is the best ever! Your menu looks good. I've been super on top of meal planning until this week. Today we're having leftover chicken tikka. I will have to figure out the rest eventually.

Yum! That soup looks incredible. Did you know chicken bryan is one of my favorite meals EVER? Yes, yes it is. I can't wait for your recipe. xo.

Spencer and I love the Filet Bryan. It's amazing. We created a pretty good version of it after checking out a few online recipes. Good luck!

Last night, made Jambalaya in honor of Fat Tuesday month. Brown rice of course.
