Hawaiian Haystacks

Have you ever had Hawaiian Haystacks? If you live in Utah, you probably have, its a classic. It is a favorite recipe of my husband's. I know, it may sound strange, but it is delicious. Fun for your kids too- they get to put on whatever they want.

Hawaiian Haystacks
3 chicken breasts
1 can cream of chicken soup
2 cups chicken stock
1/2 cup sour cream
salt
pepper
Cooked Rice
Desired Toppings

Boil chicken until just done. Cut into cubes or shred with two forks. In a saucepan, combine remaining ingredients. Add cooked chicken. Heat until warm. May need to add more stock if sauce is too thick. Spoon over cooked rice (we like Jasmine in our house).

Top with the toppings you like. Serves 4.

These are some of the ones we like:
Chow Mein Noodles (these are a must!)
Cheddar cheese
Craisins (or raisins if you like that sort of thing)
Peas
Pineapple
Tomatoes
Other things you can add:
Celery
Broccoli
Olives
Anything you are trying to empty out of the fridge... well, almost.

Sorry - I had to close this post to comments because I was getting some nasty spam. I would love to hear what you think about this -- but comment on another post! Thanks -Sarah

Yes, chow mein noodles are a must! We love Hawaiian Haystacks! I'd forgotten about them so thanks for the reminder. We may just have to serve these tonight for dinner. We also love coconut and green onions!

Not quite sure why someone would want to feed their family something that looks like vomit. And cream of chicken soup? That's not an ingredient, it's the lazy woman's way of saying, "Hi family--you think I love you but what I'm about to feed you clearly says otherwise."

Do some real cooking, would you? This is just crap.

Hmmmm...I guess I should start by confessing that the "vomit" (as described above by angry anonymous person who shall not be named) is quite tasty. The moral of the story: don't judge a book by its cover (or hawaiin haystacks by their looks), even if it "looks like vomit." You never know when it might be a tasty treat. Although, I'm pretty sure hawaiin haystacks have pretty much always been tasty. Maybe its just me. Another quick and easy recipe from rhrecipes.blogspot.com. I'm pleased so far.

Dear Anon,

First, no one is making you read this blog or make this food. Why are you taking the time to make comments like that? Just move on.
Second, you are a coward. If you are going to leave a comment, have the guts to say who you are.
Third, I love this recipe. Mmmmm!!

I am all about quick and easy recipes! When I read this one the other day I put it on my list of things to make soon. I haven't had this since I was a kid. I hope you won't let a negative comment make you change your blog or feel bad about posting easy yummy things.

Hey Sarah, I think you are doing a great job on your site. Don't let some anonymous jerk spoil things for you. I love your site! Happy cooking!

Umm...wow. Mr. Anonymous clearly has some rage issues that he needs to address. And yes, I think it's a man, because any woman would know that a "lazy woman" who cooks for her family is a complete contradiction in terms.

And yeah, "lazy" is pretty much the last word I would use to describe someone who works as a nurse, cares for her husband and baby girl, makes incredible dinners, and still manages to run a fabulous cooking blog. Keep it up; I love the blog and think you're doing great.

Sarah- I absolutely love this blog, and love the fact that your recipes are simple and easy to follow for anyone who likes to cook and likes to eat :) Whoever doesn't understand how awesome an easy to prepare meal is pretty stupid :P

P.S.- that's exactly how haystacks are supposed to look. And no matter what they look like they are nummers! I love em!

Anonymous, you make me laugh. Anyone who rages over food and does it with such venom must have a pretty dull life.

Dear Sarah. I love this blog. I love your food. And you have just about single-handedly inspired me to learn how to cook and actually enjoy it. Sorry someone was so mean. If they knew you they would never say things like that to you. And I think the haystacks look delicious! They are already on the menu for this week. :)

Dear Anonymous - you are a BUTT HEAD! Seriously, you really have that much time on your hands commenting on people's blogs all day critisizing them for their talents? Maybe you should acquire some and get a real day job!

I love your recipes and for what it is worth every April and Oct. around the 3rd or 4th we feed about 125 to 160 people. One of their favorites is Hawaiian Haystacks and mine also by the way. Do you have a list of all your recipes I can give to my wife For Valentines Day by any chance. P.S. I need one of the aprons for her also. How do I buy one?
